Quinoa and vegetable stew


  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 cups chopped mixed vegetables (such as carrots, potatoes, and green beans)
  • 1 tsp cumin powder
  • 1 tsp dried oregano
  • Salt and pepper to taste


  1. Rinse the quinoa in a fine mesh strainer, then place it in a pot with the vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until the quinoa is cooked.
  2. In a separate pan, sauté the onion and garlic in a little bit of oil until softened.
  3. Add the chopped vegetables, cumin, oregano, salt, and pepper to the pan and cook for a few minutes.
  4. Add the quinoa and broth to the vegetable mixture and stir everything together. Simmer for an additional 10 minutes.
